Glaze
  • 3 tablespoons Olive Oil Use high-quality extra virgin variety.
  • 1/4 cup Honey Maple syrup or agave syrup can replace for a vegan version.
  • 1 cup Cranberries

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C) to ensure perfectly caramelized edges.
  2. Wash and chop the vegetables into uniform pieces for even cooking. Par-cook sweet potatoes and beets if needed.
  3. Assemble the skewers by threading the chopped vegetables, alternating types for colorful presentation.
  4. Drizzle with olive oil and season with salt and pepper. Arrange skewers on a baking sheet lined with parchment.
  5. Place in the oven and roast for 20–25 minutes, turning halfway through for even cooking.
  6. While roasting, prepare the cranberry honey glaze by simmering cranberries, orange juice, and spices until thickened.
  7. In the last 5 minutes of roasting, brush the glaze over the skewers for a shiny finish.
  8. Remove from the oven and let rest for 5 minutes before serving warm.
