- Preheat your oven to 425°F (220°C) to ensure perfectly caramelized edges.
- Wash and chop the vegetables into uniform pieces for even cooking. Par-cook sweet potatoes and beets if needed.
- Assemble the skewers by threading the chopped vegetables, alternating types for colorful presentation.
- Drizzle with olive oil and season with salt and pepper. Arrange skewers on a baking sheet lined with parchment.
- Place in the oven and roast for 20–25 minutes, turning halfway through for even cooking.
- While roasting, prepare the cranberry honey glaze by simmering cranberries, orange juice, and spices until thickened.
- In the last 5 minutes of roasting, brush the glaze over the skewers for a shiny finish.
- Remove from the oven and let rest for 5 minutes before serving warm.
