  • 1 pound smoked sausage (Andouille) or kielbasa or smoked chorizo

  • 2 cups cubed potatoes peeled
  • 2 cups corn fresh off the cob or frozen
  • 1 medium red bell pepper sliced
For Seasoning and Cooking
  • 2 tablespoons olive oil or melted butter or avocado oil
  • 1 tablespoon Cajun seasoning adjust to taste
  • 1 teaspoon black pepper

Step-by-Step Instructions
  1. Prep the vegetables by peeling and cubing the potatoes, slicing the red bell pepper, and cutting the corn off the cob.
  2. In a large mixing bowl, toss the potatoes, corn, and sliced red bell pepper with olive oil, Cajun seasoning, and black pepper.
  3. In a separate bowl, combine the peeled shrimp with sliced smoked sausage until evenly mixed.
  4. Assemble by taking two large sheets of aluminum foil, dividing the vegetable mixture and topping with shrimp and sausage. Seal the packets tightly.
  5. Cook the foil packs on a preheated grill at medium-high heat or in a 400°F (200°C) oven for 15-20 minutes.
  6. Carefully open the foil packs and serve them, garnishing with chopped parsley or green onions and a squeeze of lemon juice.
