For the Dressing
  • ¾ cup Greek Yogurt Sour cream or dairy-free yogurt are great substitutes.
  • 2 fresh Limes, juiced Lemon juice can be an excellent alternative.
  • 1 tbsp Chili Powder Use smoked paprika for a different flavor twist.
  • 1 tsp Garlic Powder Fresh garlic brings a robust taste if you prefer.
  • 1 tsp Cumin Coriander can be swapped for a unique twist.
  • 1 tsp Paprika Smoked paprika enhances the dish’s warmth.
  • ¼ tsp Salt Adjust to taste as needed.

Method
 

Preparation
  1. In a small mixing bowl, combine Greek yogurt, lime juice, chili powder, garlic powder, cumin, paprika, and salt. Whisk until smooth and creamy.
  2. In a large salad bowl, add shredded chicken, black beans, corn, chopped jalapeño, quartered cherry tomatoes, chopped red onion, and pumpkin seeds. Mix until evenly distributed.
  3. Drizzle the dressing over the salad mixture and gently toss using tongs to coat all ingredients.
  4. Serve immediately or store in an airtight container in the refrigerator for up to 3-4 days, adding dressing just before serving.
