For the Rice
  • 2 cups uncooked rice
For the Chicken and Sauce
  • 3 large sliced chicken breasts or substitute with thighs
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp oregano
  • 1/2 cup soy sauce opt for gluten-free if needed
  • 1/2 cup honey
  • 1/4 cup rice vinegar
  • 3 cloves garlic minced
  • 2 tbsp sriracha adjust to taste
  • 2 tsp sesame oil
  • 1 tsp ground ginger
  • 2 tsp arrowroot powder mixed with 2 tbsp water to thicken
For the Spicy Mayo
  • 1/2 cup mayonnaise
  • 1 tbsp additional sriracha
  • 2-3 tbsp water to adjust consistency
For garnishing
  • sesame seeds for a finishing touch

Method
 

Step-by-Step Instructions
  1. Cook the rice according to package instructions for 15-20 minutes until tender. Fluff and set aside.
  2. Chop broccoli into florets and steam or sauté for 5-7 minutes until vibrant green and tender. Set aside.
  3. Season chicken breasts with salt, pepper, chili powder, smoked paprika, onion powder, and oregano. Mix well.
  4. In a skillet, heat olive oil over medium-high heat and cook the seasoned chicken for 7-10 minutes until golden brown and cooked through.
  5. Whisk soy sauce, honey, rice vinegar, garlic, sriracha, sesame oil, and ginger in a bowl. Add to skillet and simmer for 5 minutes until thick.
  6. In a small bowl, mix mayonnaise with additional sriracha and water to desired consistency for the spicy mayo.
  7. Assemble the bowls with rice at the base, topped with honey garlic chicken, broccoli, spicy mayo, and sprinkle sesame seeds.
