  • 1 cup Bell Peppers Chopped into small pieces.
  • 1 cup Frozen Peas No need to thaw.
For the Seasoning
  • 2 tablespoons Olive Oil
  • 1 tablespoon Chili Powder Adjust to taste.
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Cumin
  • 1 teaspoon Salt To taste.
  • 1 teaspoon Pepper To taste.
For the Topping
  • 1 cup Shredded Cheddar Cheese Or plant-based cheese for vegan.
  • 1/4 cup Fresh Cilantro Optional for garnish.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Rinse the quinoa under cold water for 1-2 minutes.
  3. Combine quinoa, black beans, corn, and diced tomatoes in a large baking dish.
  4. Add vegetable broth, bell peppers, and frozen peas; stir gently.
  5. Drizzle olive oil and add chili powder, garlic powder, cumin, salt, and pepper; stir to combine.
  6. Cover with aluminum foil and bake for 45 minutes.
  7. Remove foil, stir, and sprinkle cheese on top; return uncovered to bake for 10-15 minutes.
  8. Bake until cheese is melted and bubbly.
  9. Allow the casserole to rest for 5 minutes before serving.
  10. Garnish with fresh cilantro if desired.
