Step-by-Step Instructions for Walking Taco Casserole
  1. Preheat your oven to 350°F (175°C) and spray a 13x9 baking dish with non-stick cooking spray.
  2. In a large skillet, brown the ground beef over medium-high heat for 5-7 minutes, then add the chopped onion and cook for an additional 2-3 minutes until translucent.
  3. Stir in the taco seasoning and water, letting it simmer for 2-3 minutes before adding black beans and diced tomatoes. Simmer for another 5 minutes until thickened.
  4. Layer Fritos in the bottom of the prepared baking dish, followed by the seasoned beef mixture and half of the shredded cheese.
  5. Add another layer of Fritos, the remaining beef mixture, and top with the rest of the cheese. Cover with aluminum foil and bake for 15 minutes.
  6. Remove the foil and bake for an additional 5 minutes until the cheese is bubbly and golden.
