Method
 

Dough Preparation
  1. Cream together unsalted butter and granulated sugar using an electric mixer until light and fluffy, about 3-4 minutes.
  2. Add in eggs and vanilla extract, mixing until well combined and smooth.
Combine Dry Ingredients
  1. Sift together all-purpose flour, baking powder, and salt in a separate bowl.
  2. Gradually add to the creamed mixture on low speed until just combined.
Chill Dough
  1. Shape dough into two discs, wrap in wax paper and refrigerate for at least 1 hour.
Roll and Cut Cookies
  1. Preheat oven to 350°F (175°C). Roll out dough to about ¼ inch thick and cut out shapes.
Bake
  1. Bake cookies for 8-9 minutes until edges are lightly golden.
  2. Allow cookies to cool on the baking sheet for about 5 minutes before transferring to a wire rack.
Prepare Icing
  1. Mix confectioner's sugar, milk and vanilla extract until smooth.
Decorate
  1. Once cooled, apply icing and add decorations while still wet.
