Bring to a simmer over medium heat, whisking until completely dissolved, about 3–5 minutes. Stir in fresh mint leaves and steep while cooling for 15 to 20 minutes.
  2. Strain and Store the Syrup: Strain the cooled ginger-mint syrup through a fine mesh sieve into a clean jar, discarding solids. Store in the refrigerator for up to a month.
  3. Mix the Mocktail: In a festive glass, add 1.5 tablespoons of the ginger-mint syrup, fill about two-thirds full with freshly squeezed orange juice, and add a splash of lime juice. Stir gently to combine.
  4. Add the Sparkling Water: Top off with sparkling water, filling the glass to the brim. Stir gently to incorporate without losing carbonation.
  5. Garnish and Serve: Garnish with fresh mint leaves and serve immediately with a colorful straw.
