  • 3 ounces Coconut Water Mild in taste, can be substituted with sparkling lemon water.
  • 1 ounce Maple Syrup Adjust to taste for less sweetness.
For the Fizz
  • 3-4 ounces Soda Water Adjust quantity for desired fizziness.
For the Garnish
  • Lemon Zest Optional rimming ingredient.
  • Fresh Thyme Sprig Can be bruised lightly before garnishing.

Method
 

Instructions
  1. Rim the glass by moistening it with a lemon wedge and dipping it in grated lemon zest.
  2. Combine 2 ounces of lemon juice, 1 ounce of maple syrup, and 3 ounces of coconut water in a cocktail shaker. Stir or shake for 15-20 seconds.
  3. Fill the glass with ice cubes, then pour the lemon juice mixture over the ice.
  4. Top with soda water, filling to the top. Stir gently to incorporate the bubbles.
  5. Garnish with a fresh thyme sprig and optionally, a lemon wheel for presentation.
