- Rim the glass by moistening it with a lemon wedge and dipping it in grated lemon zest.
- Combine 2 ounces of lemon juice, 1 ounce of maple syrup, and 3 ounces of coconut water in a cocktail shaker. Stir or shake for 15-20 seconds.
- Fill the glass with ice cubes, then pour the lemon juice mixture over the ice.
- Top with soda water, filling to the top. Stir gently to incorporate the bubbles.
- Garnish with a fresh thyme sprig and optionally, a lemon wheel for presentation.
