Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and position the oven rack in the middle.
  2. Trim away excess fat and silver skin from the pork tenderloins, and pat them dry.

  4. Generously rub the spice mix all over both tenderloins for maximum flavor.
  5. Transfer the seasoned pork tenderloins into a 9x13 inch baking dish and add pats of butter on top.
  6. Bake uncovered for approximately 25 minutes, or until the internal temperature reaches 145°F (63°C).
  7. Remove from the oven and let the pork rest for 5-10 minutes.
  8. Slice the pork tenderloin into medallions and serve with pan juices, garnished with parsley.
