  • 2 cups cheese tortellini use frozen or fresh
  • 8 oz bacon can substitute with turkey bacon
  • 1 cup pepperoncini peppers sliced; can substitute with jalapeños
  • 1 cup cherry tomatoes halved; grape tomatoes can be used
  • 1/2 cup red onion diced; green onions can be substituted
  • 1/2 cup Parmesan cheese freshly grated; Grana Padano can be used
For the Dressing
  • 1 cup mayonnaise Greek yogurt can be used instead
  • 2 tablespoons red wine vinegar can substitute with apple cider vinegar
  • 1 teaspoon garlic powder can use fresh minced garlic
  • 1 teaspoon Italian seasoning can use oregano as a substitute
  • 1/4 teaspoon crushed red pepper adjust for spiciness
  • 1 teaspoon salt to taste

Method
 

Step-by-Step Instructions
  1. Cook the diced bacon in a large skillet over medium heat for about 6-8 minutes until crispy. Transfer to paper towels to drain.
  2. Bring a pot of salted water to a boil, then add the tortellini and cook according to package instructions, about 3-5 minutes. Drain and rinse under cold water.
  3. In a mixing bowl, combine mayonnaise, red wine vinegar, garlic powder, Italian seasoning, crushed red pepper, and salt. Whisk until smooth.
  4. Add cooled tortellini, pepperoncini, cherry tomatoes, red onion, bacon, and Parmesan cheese to the dressing. Gently fold together.
  5. Cover and refrigerate for at least 1 hour to let the flavors meld.
  6. Before serving, stir and adjust seasoning if needed. Serve chilled.
