Method
 

Step-by-Step Instructions
  1. Preheat your oven to 450°F (232°C). In a mixing bowl, combine the ground beef, egg, grated Parmesan, breadcrumbs, minced onion, garlic, and spices. Form into 1-inch meatballs and bake for about 10 minutes.
  2. In a large pot, heat olive oil over medium heat. Add chopped carrots, celery, minced onion, and garlic. Sauté for about 5 minutes until tender.
  3. Add the baked meatballs, broth, crushed tomatoes, and salt to the pot. Bring to a gentle boil.
  4. Once boiling, stir in the ditalini pasta, cooking for about half the package time until slightly firm.
  5. Remove bay leaves or cheese rinds, stir in spinach, and let wilt for about 2 minutes. Serve hot.
