For the Corn Topping
  • 1 cup sweet corn kernels Grilled corn enhances flavor

  • 2 tablespoons mayonnaise Optional
  • 1/4 cup cotija cheese Feta or queso fresco can be used
  • 1/2 teaspoon additional chili powder

For the Rice Base
  • 2 cups cooked jasmine rice Can substitute with white, brown, or cauliflower rice
  • 1/4 cup fresh cilantro Can substitute with parsley or green onions

Method
 

Marinating and Cooking
  1. In a medium bowl, combine lime juice, avocado oil, chili powder, garlic powder, salt, and black pepper. Add the chicken thighs and marinate for 15-30 minutes.
  2. Heat a skillet over medium-high heat. Sear the marinated chicken thighs for 8-10 minutes on each side until cooked through.
  3. Transfer cooked chicken to a cutting board and let rest before slicing.
Preparing the Topping
  1. In a separate bowl, mix sweet corn, red onion, sour cream, mayonnaise, cotija cheese, additional chili powder, salt, and lime juice until creamy.
Assembling the Bowl
  1. Place a serving of jasmine rice in each bowl, top with slices of chicken, and add a scoop of the corn mixture. Garnish with cotija cheese and cilantro.
  2. Serve with lime wedges on the side for added zest.
