  • 1 tablespoon Fish Sauce
For the Eggs
  • 2 Eggs
For the Brightness
  • 1 tablespoon Lime Juice freshly squeezed
For the Spice
  • 1 tablespoon Thai Chili Paste or Sriracha
For Cooking
  • 2 tablespoons Vegetable Oil for high-heat cooking
For Garnish
  • 1/4 cup Cilantro optional, chopped

Method
 

Step-by-Step Instructions
  1. Sear the shrimp: Heat 1 tablespoon of vegetable oil over medium-high heat and sear the shrimp for 1-2 minutes on each side until pink and opaque.
  2. Scramble the eggs: Crack 2 eggs into the skillet and gently scramble for 1-2 minutes until just set.
  3. Sauté aromatics: Add garlic and the white parts of the green onions, sauté for 30 seconds.
  4. Stir-fry the rice: Add the jasmine rice and stir-fry for 2-3 minutes.
  5. Season the rice: Pour in soy sauce, fish sauce, and chili paste, then add shrimp and scrambled eggs.
  6. Finish with green onions and lime: Stir in the green parts of the onions and squeeze lime juice over the top.
  7. Garnish and serve: Sprinkle with cilantro, serve hot with lime wedges.
