Preparation Steps
  1. Preheat your oven to 375°F (190°C) and prepare a baking sheet with parchment paper.
  2. Slice the zucchinis lengthwise into thin ribbons, drizzle with olive oil, and sprinkle with salt.
  3. Roast the zucchini slices in the oven for 10-12 minutes until pliable.
  4. Combine fresh vegan ricotta, cooked spinach, chopped basil, Italian seasoning, and salt in a bowl.
  5. Take 1-2 tablespoons of the filling and place it on each zucchini strip, rolling tightly.
  6. Pour marinara sauce into a baking dish and arrange zucchini rolls seam-side down.
  7. Sprinkle vegan mozzarella cheese on top of the arranged zucchini rollatini.
  8. Bake in the oven for 20-25 minutes until the cheese is melted and bubbly.
  9. Let it cool slightly before serving with a side salad or crusty bread.
