Ingredients

For the Cheese Base
  • 8 oz Cream Cheese For a vegan version, choose a dairy-free option.
  • 1 cup Shredded Cheddar Cheese Can be swapped with Monterey Jack for a milder taste.
For the Veggie Mix
  • 1 can Black Beans Choose canned or boiled dried beans for convenience.
  • 1 cup Corn (canned or frozen) Fresh corn is a delightful option in summer.
  • 1 cup Diced Tomatoes Fresh tomatoes work well, or salsa can be used as an alternative.
  • 1/2 cup Chopped Red Onion Green onions can serve as a milder substitute.
For the Kick
  • 1 medium Jalapeño Peppers (fresh or pickled) Adjust the amount to match your spice preference.
  • 1/4 cup Fresh Cilantro Feel free to omit or replace with parsley.
  • 2 tbsp Fresh Lime Juice Lemon juice can be a suitable substitute.

Equipment

  • mixing bowl
  • Hand Mixer
  • plastic wrap
  • Serrated knife

Method

Step-by-Step Instructions
  1. Start by dicing all your fresh vegetables including tomatoes, red onion, and jalapeño peppers. Rinse and drain the black beans and corn thoroughly to avoid excess moisture.
  2. In a large mixing bowl, combine the softened cream cheese and shredded cheddar cheese. Beat the mixture until it becomes smooth and creamy.
  3. Gently fold in the black beans, corn, diced tomatoes, chopped red onion, jalapeño peppers, and fresh cilantro into the cheese mixture. Drizzle the fresh lime juice over the top.
  4. Lay a large piece of plastic wrap on your countertop. Spoon the cheese mixture onto the center of the wrap and use the wrap to help form the mixture into a log shape.
  5. Place the wrapped cheese log into the refrigerator and chill for at least 2 hours.
  6. Once chilled, unwrap the cheese log from the plastic wrap and place it on a serving platter. Slice the log into even pieces using a serrated knife.
