- Start by dicing all your fresh vegetables including tomatoes, red onion, and jalapeño peppers. Rinse and drain the black beans and corn thoroughly to avoid excess moisture.
- In a large mixing bowl, combine the softened cream cheese and shredded cheddar cheese. Beat the mixture until it becomes smooth and creamy.
- Gently fold in the black beans, corn, diced tomatoes, chopped red onion, jalapeño peppers, and fresh cilantro into the cheese mixture. Drizzle the fresh lime juice over the top.
- Lay a large piece of plastic wrap on your countertop. Spoon the cheese mixture onto the center of the wrap and use the wrap to help form the mixture into a log shape.
- Place the wrapped cheese log into the refrigerator and chill for at least 2 hours.
- Once chilled, unwrap the cheese log from the plastic wrap and place it on a serving platter. Slice the log into even pieces using a serrated knife.
