- Prepare the cream cheese filling by beating 8 ounces of softened cream cheese in a mixing bowl. Add 1/4 cup of granulated sugar, 1 teaspoon of vanilla extract, and 1 tablespoon of freshly squeezed lemon juice. Mix until smooth and creamy.
- Preheat your oven to 375°F (190°C). Open two 8 oz cans of refrigerated crescent rolls and separate the dough into 16 triangles.
- Take 1 to 2 tablespoons of the cream cheese filling and spread it evenly on each triangle. Add blueberries, then roll from the wide end to the tip, tucking in the ends.
- Arrange the pastries on a greased baking sheet. Brush with melted butter and sprinkle with coarse sugar. Bake for 12-15 minutes until golden brown.
- Prepare the glaze by mixing 1 cup of powdered sugar with 1-2 tablespoons of milk and a splash of vanilla until smooth. Drizzle over warm rolls.
