  • 1 can Black Beans drained and rinsed
  • 1 cup Corn frozen or fresh
  • 1 medium Jalapeño diced
  • 1 medium Red Bell Pepper diced
  • 3 stalks Green Onions sliced
  • 1/4 cup Cilantro optional, chopped
For the Dressing
  • 1 packet Taco Seasoning
  • 1 teaspoon Ground Cumin
  • 1 cup Sour Cream or Greek yogurt
  • 1/2 cup Mayonnaise or light mayo
  • 2 tablespoons Lime Juice freshly squeezed
  • 1 tablespoon Chipotle Sauce adjust for heat
For the Crunch
  • 1 bag Chili Cheese Fritos reserve some for topping

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine coleslaw mix, black beans, corn, jalapeño, red bell pepper, green onions, and cilantro. Toss gently and set aside.
  2. In a medium bowl, whisk together sour cream, mayonnaise, lime juice, and chipotle sauce until smooth.
  3. Pour the dressing over the vegetable mixture and gently fold until well-coated.
  4. Fold in most of the Chili Cheese Fritos, reserving some for topping.
  5. Transfer the salad to a serving bowl and top with reserved Fritos. Serve immediately.
