  • 4 pieces Sweet or Yellow Onions ideal for stuffing
  • to taste Salt for seasoning the filling
  • 2 tablespoons Olive Oil can substitute with avocado oil
  • 1 pound Ground Beef (or Ground Lamb) opt for ground turkey for a leaner option
  • 1 cup Long-Grain Rice brown rice or quinoa are alternatives
  • 1 small Small Onion shallots can be a substitute
  • 2 cloves Garlic fresh is best, powder works too
  • 1/4 cup Fresh Parsley cilantro is an alternative
  • 2 tablespoons Fresh Mint (or Dried) substitute with oregano if needed
  • 1 teaspoon Ground Allspice mix of nutmeg and cinnamon can replace it
  • 1/2 teaspoon Ground Cinnamon use sparingly
  • to taste Pepper freshly ground is best
  • 1 can Crushed Tomatoes for sauce base
  • 1 cup Beef or Vegetable Broth homemade stock is great
  • 1 teaspoon Dried Oregano fresh can be substituted
  • 2 tablespoons Fresh Dill (or Dried) thyme can be used in place
  • Juice of 1 lemon Juice of Lemon fresh is best

Method
 

Step-by-Step Instructions
  1. Prepare the Onions: Boil whole onions in salted water for 10-12 minutes. Peel carefully to create cups.
  2. Sauté Filling: Heat 2 tbsp olive oil, sauté small onion and minced garlic until translucent. Add ground beef and cook until browned, mix in rice and spices, then cool slightly.
  3. Stuff Onions: Fill each onion cup with the meat-rice mixture, pack slightly. Arrange in a greased casserole dish.
  4. Make Sauce: Sauté garlic, then add crushed tomatoes, broth, herbs, and lemon juice. Simmer for 5 minutes.
  5. Bake: Preheat oven to 375°F (190°C). Pour sauce over stuffed onions, cover, and bake for 45 minutes. Remove foil and bake for another 20-30 minutes until brown.
