Ingredients
  

For the Chicken
  • 4 pieces Chicken Breasts marinated
  • 1/4 cup Olive Oil extra virgin
  • 1 each Lemon Juice fresh
  • 2 cloves Garlic minced
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Thyme
  • Salt to taste
  • Pepper to taste
For the Tzatziki
  • 1 cup Plain Greek Yogurt
  • 1 each Cucumber grated and squeezed dry
  • 1 clove Garlic minced
  • 1 tablespoon Olive Oil
  • 1/2 each Lemon Juice
  • 2 tablespoons Fresh Dill chopped
  • 2 tablespoons Fresh Parsley chopped
For the Salad
  • 6 cups Romaine Lettuce chopped
  • 1/2 cup Kalamata Olives pitted
  • 1 each Sliced Red Onion

Method
 

Directions
  1. In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper. Marinate chicken for 30 minutes to 2 hours.
  2. In another bowl, combine Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, dill, and parsley. Mix until smooth and chill for 30 minutes.
  3. Preheat grill to medium-high heat. Remove chicken from marinade, grill for 6-7 minutes per side, until cooked through. Let it rest for 5 minutes before slicing.
  4. On a platter, arrange a bed of romaine lettuce, add sliced cucumbers, olives, and red onion.
  5. Top salad with sliced chicken and drizzle with tzatziki. Garnish with fresh parsley and serve with warm pita bread.

Notes

For best flavor, marinate chicken longer and always squeeze water from cucumbers before adding to tzatziki.
