Marinating Chicken
- In a bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, salt, pepper, and red pepper flakes. Add chicken and coat evenly. Let it marinate for 15 minutes.
Preparing Salsa
- Chop cucumber, tomato, bell pepper, and red onion into bite-sized pieces. Combine in a bowl with parsley and feta. Drizzle with lemon juice, season, and let sit for 10 minutes.
Cooking Chicken
- Heat a skillet over medium-high heat. Cook marinated chicken for 3-5 minutes on each side until golden brown and internal temperature reaches 165°F. Remove and let rest.
Warming Pitas
- Warm pitas over gas flame, in a skillet for 1 minute, or wrap in foil and heat in the oven at 350°F for 5 minutes.
Assembling Tacos
- Fill warmed pitas with sliced chicken, top with fresh salsa, and drizzle tzatziki. Serve immediately.
