Ingredients
  

For the Chicken
  • 4 pieces Boneless, skinless chicken breasts Thighs can be substituted for moisture.
  • 3 tablespoons Olive oil Extra virgin recommended.
  • 1 tablespoon Lemon juice Vinegar can be used if necessary.
  • 2 cloves Garlic Freshly minced.
  • 1 teaspoon Oregano Fresh or dried.
  • 1 teaspoon Paprika Adjust to taste.
  • 1 teaspoon Salt Adjust to taste.
  • 1 teaspoon Pepper Adjust to taste.
  • 1 pinch Red pepper flakes Adjust to taste.
For the Salsa
  • 1 piece Cucumber Chopped.
  • 1 piece Tomato Chopped.
  • 1 piece Bell pepper Chopped.
  • 1 small Red onion Chopped.
  • 1 handful Parsley Chopped.
  • 100 grams Feta cheese Crumbled.
For the Tacos
  • 4 pieces Pitas Can substitute with tortillas or lettuce wraps.
  • 1 cup Tzatziki Homemade or store-bought.

Method
 

Marinating Chicken
  1. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, salt, pepper, and red pepper flakes. Add chicken and coat evenly. Let it marinate for 15 minutes.
Preparing Salsa
  1. Chop cucumber, tomato, bell pepper, and red onion into bite-sized pieces. Combine in a bowl with parsley and feta. Drizzle with lemon juice, season, and let sit for 10 minutes.
Cooking Chicken
  1. Heat a skillet over medium-high heat. Cook marinated chicken for 3-5 minutes on each side until golden brown and internal temperature reaches 165°F. Remove and let rest.
Warming Pitas
  1. Warm pitas over gas flame, in a skillet for 1 minute, or wrap in foil and heat in the oven at 350°F for 5 minutes.
Assembling Tacos
  1. Fill warmed pitas with sliced chicken, top with fresh salsa, and drizzle tzatziki. Serve immediately.
