  • 1/4 medium Red Onion optional; soak in ice water to tone down sharpness
For the Dressing
  • 1/4 cup Extra Virgin Olive Oil base for the dressing
  • 2 tablespoons Fresh Lime Juice or substitute lemon juice
  • 1 tablespoon Honey or use agave for a vegan option
  • 1/4 teaspoon Red Pepper Flakes optional for subtle warmth
  • 1 pinch Flaky Sea Salt add to taste before serving

Method
 

Preparation
  1. Slice the small seedless watermelon into 1-inch thick triangular wedges, leaving rind intact for stability. Pat dry with a paper towel.
  2. Brush each side of the watermelon wedges with extra virgin olive oil and sprinkle with flaky sea salt.
  3. In a small bowl, combine extra virgin olive oil, fresh lime juice, honey, and red pepper flakes to create a zesty dressing. Whisk until blended.
  4. Preheat grill to high heat (450-500°F). Grill watermelon wedges for about 3 minutes on each side until charred and warm.
  5. Transfer grilled watermelon to a platter while warm. Crumble feta, add mint leaves and toasted pepitas, then drizzle with lime dressing and finish with flaky sea salt.
