  • 2 ripe bananas mashed
  • 1 cup oats rolled
  • 1 cup flour whole wheat preferred
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup sweetener sugar, maple syrup, or honey
  • 1/4 cup milk dairy or dairy-free
  • 1/4 cup oil coconut or vegetable oil
  • 1 tsp vanilla extract

Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners or cooking spray.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Add the oats, flour, baking powder, baking soda, salt, sweetener, milk, oil, and vanilla extract. Mix until well combined.
  4. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  5. Bake for 20-25 minutes, or until a toothpick comes out clean.
  6. Allow the muffins to cool in the tin for a few minutes before transferring to a wire rack.
