For the Broth
  • 6 cups Low-Sodium Chicken Broth Vegetable broth works for vegetarian version.
  • 2 tablespoons Dark Soy Sauce Mix regular soy sauce with molasses if dark soy is unavailable.
  • 2 cups Baby Bok Choy Substitute with spinach or napa cabbage if needed.

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine ground chicken, rice vinegar, soy sauce, toasted sesame oil, grated garlic, fresh ginger, light brown sugar, and finely chopped green onions. Mix thoroughly for about 2 minutes.
  2. Lay out wonton wrappers and spoon about 1 teaspoon of filling into the center of each. Moisten edges with water, fold to form a triangle, and seal firmly.
  3. In a pot, bring the chicken broth to a gentle boil. Stir in minced garlic, dark soy sauce, and sesame oil. Add chopped bok choy and simmer for 2-3 minutes.
  4. In another pot, boil water and add wontons. Cook for 3-4 minutes until they float and are tender.
  5. Transfer cooked wontons to the broth, stir gently, and let warm for another minute. Serve hot, garnished with chopped green onions or chives.
