Step-by-Step Instructions
  1. In a large pot, heat 2 tablespoons of olive oil over medium-high heat. Add 1 diced onion and sauté for about 3 minutes until it becomes translucent and fragrant.
  2. Stir in 8 ounces of sliced mushrooms and cook for another 3 minutes. Continue stirring frequently until the mushrooms are tender.
  3. Add 4 cloves of minced garlic, 1 teaspoon of Italian seasoning, and a pinch of salt and black pepper. Cook for about 30 seconds.
  4. Pour in 4 cups of chicken broth, 2 cups of water, and 32 ounces of spaghetti sauce. Gently add in 30 meatballs, stirring to combine.
  5. Once boiling, add 24 ounces of cheese-filled tortellini to the pot. Reduce the heat to medium and cook for approximately 7 minutes.
