Prep and Combine
- Grease a 9x13 inch casserole dish with butter. Cut your bread into bite-sized chunks and place in a large mixing bowl.
- In another bowl, whisk together eggs, milk, both sugars, vanilla extract, and cinnamon until smooth.
- Pour custard over the bread chunks. Add chopped bananas and gently fold together until fully coated.
- Transfer the mixture to the greased dish, cover tightly with plastic wrap, and refrigerate overnight.
- In the morning, preheat your oven to 350°F (176°C) and let casserole sit at room temperature for 15 minutes.
- Mix flour, brown sugar, and cinnamon for the streusel topping. Cut in cold butter until crumbly.
- Bake casserole for 35-40 minutes until center is set. Sprinkle streusel on top and bake for an additional 5 minutes.
- Let cool for a few minutes before serving warm, drizzled with syrup or topped with fresh fruit.
