Method
 

Prep and Combine
  1. Grease a 9x13 inch casserole dish with butter. Cut your bread into bite-sized chunks and place in a large mixing bowl.
  2. In another bowl, whisk together eggs, milk, both sugars, vanilla extract, and cinnamon until smooth.
  3. Pour custard over the bread chunks. Add chopped bananas and gently fold together until fully coated.
  4. Transfer the mixture to the greased dish, cover tightly with plastic wrap, and refrigerate overnight.
  5. In the morning, preheat your oven to 350°F (176°C) and let casserole sit at room temperature for 15 minutes.
  6. Mix flour, brown sugar, and cinnamon for the streusel topping. Cut in cold butter until crumbly.
  7. Bake casserole for 35-40 minutes until center is set. Sprinkle streusel on top and bake for an additional 5 minutes.
  8. Let cool for a few minutes before serving warm, drizzled with syrup or topped with fresh fruit.
