Step-by-Step Instructions
  1. Heat 1 tablespoon of oil in a frying pan over medium-high heat. Sear the chuck or braising steak in batches for 4–5 minutes until browned on all sides. Transfer to the slow cooker.
  2. In the same pan, sauté onions, garlic, and ginger for 2-3 minutes until fragrant and onions are translucent.
  3. Stir in the spices and cook for 1 minute to toast them.
  4. Add beef broth and water, scraping the browned bits from the pan. Simmer for 2 minutes.
  5. Pour the mixture over the seared beef in the slow cooker. Add cinnamon stick, bay leaf, and salt. Stir to combine.
  6. Cover and cook on low for 8 hours or high for 4 hours until beef is tender.
  7. Stir the curry, adjust seasoning if needed, and serve garnished with cilantro.
