- Heat 1 tablespoon of oil in a frying pan over medium-high heat. Sear the chuck or braising steak in batches for 4–5 minutes until browned on all sides. Transfer to the slow cooker.
- In the same pan, sauté onions, garlic, and ginger for 2-3 minutes until fragrant and onions are translucent.
- Stir in the spices and cook for 1 minute to toast them.
- Add beef broth and water, scraping the browned bits from the pan. Simmer for 2 minutes.
- Pour the mixture over the seared beef in the slow cooker. Add cinnamon stick, bay leaf, and salt. Stir to combine.
- Cover and cook on low for 8 hours or high for 4 hours until beef is tender.
- Stir the curry, adjust seasoning if needed, and serve garnished with cilantro.
