Step-by-Step Instructions
  1. In a large pot, melt 4 tablespoons of butter over medium heat. Add 1 chopped onion and 2 minced garlic cloves, cooking for about 3-4 minutes until the onion is translucent and fragrant.
  2. Sprinkle in 1/4 cup of all-purpose flour and whisk continuously for 1-2 minutes until lightly golden and bubbling.
  3. Gradually whisk in 4 cups of vegetable broth, stirring frequently until it starts to thicken, about 5 minutes.
  4. Add 4 cups of chopped broccoli and 1 cup of sliced carrots to the pot. Cover and let it simmer for about 10 minutes.
