Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine peeled and sliced carrots with the trimmed green beans. Drizzle in olive oil, honey, and lemon juice. Sprinkle cinnamon, nutmeg, salt, and pepper over the vegetables. Toss to coat.
  3. Spread the coated vegetables on a large baking sheet in a single layer for even roasting.
  4. Roast in the preheated oven for 20-25 minutes, stirring halfway through.
  5. Once roasted, transfer to a serving dish and garnish with freshly chopped parsley. Serve immediately.
