Step-by-Step Instructions
  1. Preheat your oven to 325°F (162°C) and grease a 9-inch springform pan with nonstick spray.
  2. Crush Oreo cookies in a food processor until finely ground, then mix with melted butter and press into the bottom of the pan.
  3. Bake the crust for 10 minutes, then remove from the oven.
  4. Beat cream cheese with an electric mixer until smooth, add sugar and mix thoroughly.
  5. Incorporate sour cream and vanilla extract, then add eggs one at a time.
  6. Fold in espresso powder gently to avoid overmixing.

  8. Cool in the oven for 1 hour, then 2 hours on a wire rack.
  9. Refrigerate for at least 6 hours or overnight.
  10. Heat heavy cream and pour over chocolate chips to make ganache.
  11. Whip heavy cream with sugar and espresso powder until stiff peaks form.
