- In a medium bowl, mix together graham cracker crumbs with melted unsalted butter until well combined. Press into the bottom of a 9-inch springform pan.
- Preheat your oven to 350°F (175°C). Bake the crust for about 10 minutes, until golden. Let cool.
- In a large bowl, combine cream cheese with honey and beat until smooth and creamy.
- Add eggs one at a time, mixing well. Follow with vanilla extract and culinary lavender, mixing until combined.
- Fold in sour cream gently to assure it's fully incorporated.
