- Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Once shimmering, add seasoned chicken pieces and sear until golden brown, about 5 minutes per side. Remove and set aside.
- In the same skillet, add one chopped onion and two minced garlic cloves. Sauté over medium heat for about 3-4 minutes until onions turn translucent.
- Sprinkle in 2 tablespoons of sweet paprika, stirring continuously for about 30 seconds to enhance flavor.
- Pour in 1 cup of low-sodium chicken broth and scrape the bottom of the pan. Bring to a gentle simmer for 2-3 minutes.
- Return seared chicken to the skillet, cover, and reduce heat to low. Simmer for 20-25 minutes until chicken is cooked through.
- Remove from heat, stir in 1 cup of sour cream, and adjust seasoning with salt and pepper as desired.
