  • 4 pieces Chicken thighs can substitute turkey or firm tofu
For the Sauce
  • 2 tablespoons Vegetable Oil any neutral oil
  • 1 large Onion chopped; yellow or white preferred
  • 2 cloves Garlic minced; fresh preferred
  • 2 tablespoons Sweet Paprika can use hot paprika for extra kick
  • 1 cup Low-Sodium Chicken Broth or vegetable broth for vegetarian option
  • 1 cup Sour Cream can swap with Greek yogurt
  • to taste Salt
  • to taste Pepper
Optional Add-ins
  • 1 cup Bell Peppers or mushrooms for added flavor
  • 1 teaspoon Cayenne Pepper or crushed red pepper flakes for heat

Method
 

Instructions
  1. Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Once shimmering, add seasoned chicken pieces and sear until golden brown, about 5 minutes per side. Remove and set aside.
  2. In the same skillet, add one chopped onion and two minced garlic cloves. Sauté over medium heat for about 3-4 minutes until onions turn translucent.
  3. Sprinkle in 2 tablespoons of sweet paprika, stirring continuously for about 30 seconds to enhance flavor.
  4. Pour in 1 cup of low-sodium chicken broth and scrape the bottom of the pan. Bring to a gentle simmer for 2-3 minutes.
  5. Return seared chicken to the skillet, cover, and reduce heat to low. Simmer for 20-25 minutes until chicken is cooked through.
  6. Remove from heat, stir in 1 cup of sour cream, and adjust seasoning with salt and pepper as desired.
