Ingredients
  

For the Meatballs
  • 1 lb Ground Beef or ground lamb or turkey
  • 3 cloves Garlic minced
  • 1 medium Onion blended
  • 1 cup Breadcrumbs gluten-free if needed
  • 1 tsp Baking Soda for tenderness
  • 1 cup Fresh Herbs (Parsley, Mint, Coriander) or use dried herbs
  • 2 tbsp Olive Oil or avocado oil
  • to taste Salt
  • to taste Black Pepper
For the Potato Wedges
  • 2 large Potatoes cut into wedges
  • 1 tbsp Cumin
  • 1 tbsp Paprika
  • 1 tbsp Dried Oregano
For the Tzatziki Sauce
  • 1 cup Thick Greek Yogurt or dairy-free yogurt
  • 1 medium Cucumber grated and moisture removed
  • 2 tbsp Lemon Juice
  • 2 tbsp Fresh Dill or Mint based on preference
For the Salad Base
  • 2 cups Lettuce chopped
  • 1 cup Tomatoes diced
  • 1 cup Cucumbers sliced
  • 1 medium Red Onion sliced
  • 1/2 cup Kalamata Olives

Method
 

Preparation Steps
  1. In a large mixing bowl, combine the ground beef, minced garlic, blended onions, breadcrumbs, baking soda, chopped fresh herbs, olive oil, salt, and pepper.
  2. Cover the bowl with plastic wrap and refrigerate for at least 2 hours.
  3. Preheat your oven to 425°F (220°C). Shape the chilled meatball mixture into meatballs, about 1-1.5 inches in diameter.
  4. Line a baking sheet with parchment paper and place the meatballs on it.
  5. Bake for 30 to 40 minutes or until the meatballs are cooked through.
  6. While the meatballs bake, cut potatoes into wedges. Toss in olive oil, cumin, paprika, and oregano, then roast alongside the meatballs.
  7. In a separate bowl, mix Greek yogurt, grated cucumber, lemon juice, and fresh dill or mint for tzatziki.
  8. Assemble the Greek Meatball Bowl starting with lettuce, then layer on tomatoes, cucumber, onion, olives, potato wedges, and meatballs topped with tzatziki.
