Preparation Steps
- In a large mixing bowl, combine the ground beef, minced garlic, blended onions, breadcrumbs, baking soda, chopped fresh herbs, olive oil, salt, and pepper.
- Cover the bowl with plastic wrap and refrigerate for at least 2 hours.
- Preheat your oven to 425°F (220°C). Shape the chilled meatball mixture into meatballs, about 1-1.5 inches in diameter.
- Line a baking sheet with parchment paper and place the meatballs on it.
- Bake for 30 to 40 minutes or until the meatballs are cooked through.
- While the meatballs bake, cut potatoes into wedges. Toss in olive oil, cumin, paprika, and oregano, then roast alongside the meatballs.
- In a separate bowl, mix Greek yogurt, grated cucumber, lemon juice, and fresh dill or mint for tzatziki.
- Assemble the Greek Meatball Bowl starting with lettuce, then layer on tomatoes, cucumber, onion, olives, potato wedges, and meatballs topped with tzatziki.

Notes
For best flavors, chill the meatball mixture before shaping and ensure to drain the cucumber for a thicker tzatziki sauce.
