- Bring a large pot of salted water to a rolling boil. Add cheese tortellini and cook for 3-5 minutes. Drain and rinse under cold water.
- Prepare ingredients: shred chicken, halve cherry tomatoes, chop sun-dried tomatoes, and rough chop spinach.
- In a large mixing bowl, whisk together mayonnaise and Greek yogurt. Add garlic powder, onion powder, Italian seasoning, salt, and pepper.
- Add cooked tortellini, shredded chicken, cherry tomatoes, sun-dried tomatoes, and spinach to the bowl. Gently toss until well coated.
- Fold in grated Parmesan cheese gently and mix until combined.
- Cover and chill in the refrigerator for at least 30 minutes.
- After chilling, stir gently and serve cold or at room temperature. Garnish as desired.
