Step-by-Step Instructions
  1. Bring a large pot of salted water to a rolling boil. Add cheese tortellini and cook for 3-5 minutes. Drain and rinse under cold water.
  2. Prepare ingredients: shred chicken, halve cherry tomatoes, chop sun-dried tomatoes, and rough chop spinach.
  3. In a large mixing bowl, whisk together mayonnaise and Greek yogurt. Add garlic powder, onion powder, Italian seasoning, salt, and pepper.
  4. Add cooked tortellini, shredded chicken, cherry tomatoes, sun-dried tomatoes, and spinach to the bowl. Gently toss until well coated.
  5. Fold in grated Parmesan cheese gently and mix until combined.
  6. Cover and chill in the refrigerator for at least 30 minutes.
  7. After chilling, stir gently and serve cold or at room temperature. Garnish as desired.
