  3. In a medium bowl, whisk together soy sauce, brown sugar, minced garlic, grated ginger, and lime juice.
  4. Chop the fresh pineapple into bite-sized pieces and fold them into the marinade.
  5. Pour half of the marinade over the chicken thighs, seal the bag, and massage to coat. Marinate in the refrigerator for at least 30 minutes.
  6. Arrange the chicken thighs skin-side up on a parchment-lined baking sheet and discard any leftover marinade.
  7. Bake in the preheated oven for 25-30 minutes until golden brown and reaching an internal temperature of 165°F (75°C).
