  • 1 cup Lime Juice Substitute with more orange juice if necessary.
  • 1/4 cup Olive Oil Can use avocado oil for different flavor.
  • 3-4 cloves Garlic (minced) Or 1 tbsp garlic paste.
  • 1 tbsp Achiote Powder Or use achiote paste.
  • 1 tsp Ground Cumin
  • 1 tsp Ground Coriander
  • 1 tsp Dried Oregano Mexican preferred.
  • 2 tsp Sea Salt Adjust to taste preference.
  • 1/2 tsp Ground Black Pepper Freshly ground preferred.
For the Chicken
  • 3 lbs Chicken (thighs, legs, and/or breast) Choose skin-on or skinless.
Optional Garnishes
  • Lime Wedges
  • Cilantro

Method
 

Step-by-Step Instructions
  1. In a large resealable bag or bowl, combine orange juice, lime juice, olive oil, minced garlic, achiote powder, ground cumin, ground coriander, dried oregano, sea salt, and black pepper. Mix thoroughly until well blended.
  2. Add your chicken pieces to the marinade, ensuring each piece is well coated. Seal the bag or cover the bowl and let it marinate at room temperature for 30 minutes or refrigerate for up to 4 hours.
  3. While the chicken marinates, preheat your grill to medium-high heat, aiming for 375°F to 400°F.
  4. Remove the chicken from the marinade, discarding the marinade. Grill the chicken skin-side down for 20 minutes, turning every 5 minutes, until charred.
  5. Alternatively, preheat your oven to 400°F and bake the marinated chicken for 35-45 minutes, flipping halfway through.
  6. Let the chicken rest for at least 10 minutes before serving with lime wedges and cilantro.
