Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (177°C). Line a 9x13-inch baking pan with parchment paper.
  2. In a large mixing bowl, whisk together flour, granulated sugar, brown sugar, baking powder, and salt.
  3. Cut in chilled butter until the mixture resembles coarse crumbs.
  4. Reserve 1 ½ cups of the crumb mixture for streusel topping. Stir in oats and press into the bottom of the pan.
  5. Par-bake the crust for 15 minutes until golden brown.
  6. Mix together fresh strawberries, granulated sugar, lemon juice, cornstarch, and optional jam.
  7. Spread the strawberry filling over the baked crust.
  8. Crumble the reserved streusel mixture over the filling.
  9. Bake for 40-45 minutes or until topping is golden brown.
  10. Cool in the pan for 2-3 hours before slicing.
