Preparation Steps
  1. Preheat your oven to 350°F (175°C). Line an 11x7 inch baking pan with parchment paper or foil.
  2. In a skillet over medium heat, sauté chopped apples with 2 tablespoons of butter, 1/4 cup of brown sugar, 1 teaspoon of vanilla extract, and 1 teaspoon of ground cinnamon for 3-4 minutes until tender.
  3. In a mixing bowl, cream together 1/2 cup of softened butter, 1/2 cup of granulated sugar, and 1/2 cup of dark brown sugar until fluffy. Incorporate the eggs one at a time, then stir in vanilla and salt.
  4. In a separate bowl, whisk together 1 1/2 cups of flour and 1 teaspoon of baking powder. Fold into the wet batter until just combined.
  5. Spread half of the blondie batter into the prepared pan. Layer the cooled apple filling evenly over it, then spoon the remaining batter on top.
  6. Bake for 25-30 minutes until golden brown and a toothpick inserted comes out clean.
  7. In a small saucepan, heat 1/4 cup of butter, 1/4 cup of maple syrup, and 1 teaspoon of ground cinnamon. Whisk in 1 cup of sifted powdered sugar until smooth.
  8. Let the blondies cool for about 10 minutes, then drizzle the maple glaze over them and allow them to cool completely before slicing.

Notes

Use room temperature eggs and butter for a smoother batter. Allow the apple mixture to cool before adding it to prevent the blondies from becoming dense. Opt for real maple syrup for authenticity.
