  • 2 tablespoons vegetable oil for frying

  • 1 medium onion sautéed until translucent
  • 3 cloves garlic minced
  • 2 cups bell peppers colorful and fresh, chopped
  • 2 stalks scallions chopped
For the Liquid
  • 2 cups chicken broth for a flavorful base
  • 2 tablespoons soy sauce can be adjusted for lower sodium options

Step-by-Step Instructions
  1. Prepare the chicken by rinsing and seasoning with salt, pepper, thyme, and curry powder. Let it marinate briefly.
  2. Brown the chicken in a large pot with vegetable oil for about 5-7 minutes on all sides until golden.
  3. Sauté onion, garlic, bell pepper, scallions, and Scotch bonnet pepper in the same pot for 3-4 minutes until fragrant.
  4. Add remaining thyme, curry powder, allspice, and tomato ketchup, cooking for 2 minutes more.
  5. Return the browned chicken to the pot, coating it well with the spice mixture.
  6. Pour in chicken broth and soy sauce until the chicken is partially submerged. Bring to a simmer.
  7. Cover and simmer for 30-40 minutes on medium-low heat, stirring occasionally.
  8. Adjust seasoning with salt, pepper, and a squeeze of lime or lemon juice before serving.
  9. Garnish with chopped parsley or cilantro and serve hot with rice.
