- Prepare the chicken by rinsing and seasoning with salt, pepper, thyme, and curry powder. Let it marinate briefly.
- Brown the chicken in a large pot with vegetable oil for about 5-7 minutes on all sides until golden.
- Sauté onion, garlic, bell pepper, scallions, and Scotch bonnet pepper in the same pot for 3-4 minutes until fragrant.
- Add remaining thyme, curry powder, allspice, and tomato ketchup, cooking for 2 minutes more.

- Pour in chicken broth and soy sauce until the chicken is partially submerged. Bring to a simmer.
- Cover and simmer for 30-40 minutes on medium-low heat, stirring occasionally.
- Adjust seasoning with salt, pepper, and a squeeze of lime or lemon juice before serving.
- Garnish with chopped parsley or cilantro and serve hot with rice.
