  1. Start by steaming fresh spinach for about 1 minute until it wilts, then strain and chop finely.
  2. In a large pot, bring salted water to a boil and cook the pasta shells for around 10 minutes until al dente. Drain and coat with olive oil.
  3. In a large mixing bowl, combine spinach, ricotta, pecorino, garlic, oregano, lemon zest, and red pepper flakes. Mix until well combined.
  4. Spread marinara sauce on the bottom of a baking dish and stuff each pasta shell with the filling, placing them filling-side up.
  5. Cover with aluminum foil and bake at 425°F for about 20 minutes, then remove the foil to brown the tops.
