Step-by-Step Instructions for Lemon Curd Cookies
- In a medium saucepan, whisk together lemon juice, lemon zest, egg yolks, sugar, and salt. Cook over medium-low heat, stirring continuously for 20-25 minutes until thickened. Add cold butter and whisk until smooth. Cool before refrigerating.
- Sift together flour, baking powder, and sea salt in a large mixing bowl. In another bowl, cream softened butter and sugar until fluffy. Add egg yolk, vanilla, and lemon zest. Gradually fold in dry ingredients. Chill dough for 1 hour.
