Step-by-Step Instructions for Lemon Curd Cookies
  1. In a medium saucepan, whisk together lemon juice, lemon zest, egg yolks, sugar, and salt. Cook over medium-low heat, stirring continuously for 20-25 minutes until thickened. Add cold butter and whisk until smooth. Cool before refrigerating.
  2. Sift together flour, baking powder, and sea salt in a large mixing bowl. In another bowl, cream softened butter and sugar until fluffy. Add egg yolk, vanilla, and lemon zest. Gradually fold in dry ingredients. Chill dough for 1 hour.
  3. Preheat oven to 350°F (175°C) and line a baking sheet with parchment. Portion cookie dough and roll into balls. Indent centers with a teaspoon. Bake for 9-10 minutes until edges are golden and centers are soft.
  4. Allow cookies to cool for 5 minutes, then fill centers with lemon curd. Optionally dust with powdered sugar. Cool completely on a wire rack before serving.
