  • 1 teaspoon Onion Powder Can omit if you prefer a simpler flavor

Equipment

  • Large pot
  • mixing bowl
  • Spatula

Method

Step-by-Step Instructions
  1. Begin by bringing a large pot of salted water to a rolling boil. Add the rotini pasta and cook according to the package instructions, typically around 10-11 minutes, until al dente. Once done, drain the pasta and rinse it under cold water to halt the cooking process.
  2. In a spacious mixing bowl, whisk together the Italian dressing, fresh lemon juice, grated Parmesan cheese, chopped parsley, garlic powder, kosher salt, black pepper, and onion powder until smooth and well-blended.
  3. Once the pasta is cooled, add it to the bowl with the dressing mixture. Gently stir until the pasta is thoroughly coated.
  4. Cover the bowl with plastic wrap and refrigerate the mixed salad for at least 2 hours.
  5. When ready to serve, remove the salad from the fridge, give it a quick stir, and transfer it to a serving bowl. Garnish with additional grated Parmesan and chopped parsley.
