  • 1 cup cheddar cheese shredded
  • 1/2 cup cooked bacon chopped
  • 1/4 cup chives chopped
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper to taste
  • 1 teaspoon salt to taste
  • 1 egg beaten
  • 1/2 cup all-purpose flour or gluten-free flour
  • 1 cup breadcrumbs panko recommended
  • 2 cups oil for frying (vegetable or canola)

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine cold leftover mashed potatoes, shredded cheddar cheese, cooked bacon, chopped chives, garlic powder, black pepper, salt, and beaten egg. Mix thoroughly until well-blended.
  2. Scoop approximately one tablespoon of the mixture and form it into a ball. If the mixture is too soft, chill in the refrigerator for 15-20 minutes.
  3. Prepare a dredging station with three plates: one with all-purpose flour, one with a beaten egg, and one with breadcrumbs. Roll each ball in flour, dip in egg, and coat in breadcrumbs.
  4. Heat about 2 inches of oil in a deep pan to 350°F (175°C). Fry the coated bites in batches for 2-3 minutes per side until golden brown.
  5. Remove the bites and drain on paper towels. Allow to cool slightly before serving with your favorite dips.
