- Preheat your oven to 400°F (200°C). Pat the chicken thighs dry with paper towels and season both sides with salt and pepper.
- In a large oven-safe skillet, heat olive oil over medium-high heat. Sear the chicken thighs skin-side down for 5-7 minutes until golden brown. Flip and cook for an additional 2 minutes.
- Transfer the chicken to a plate. In the same skillet, sauté minced garlic for about 30 seconds until fragrant.
- Add maple syrup, soy sauce, Dijon mustard, and apple cider vinegar to the skillet. Stir and simmer for 1-2 minutes to create the glaze.
- Return the chicken thighs to the skillet skin-side up and spoon some glaze over them.
- Transfer the skillet to the oven and roast for 15-18 minutes until the internal temperature reaches 175°F (75°C).
- Remove the skillet from the oven, baste the chicken with the glaze, and let rest for about 5 minutes.
