Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Pat the chicken thighs dry with paper towels and season both sides with salt and pepper.
  2. In a large oven-safe skillet, heat olive oil over medium-high heat. Sear the chicken thighs skin-side down for 5-7 minutes until golden brown. Flip and cook for an additional 2 minutes.
  3. Transfer the chicken to a plate. In the same skillet, sauté minced garlic for about 30 seconds until fragrant.
  4. Add maple syrup, soy sauce, Dijon mustard, and apple cider vinegar to the skillet. Stir and simmer for 1-2 minutes to create the glaze.
  5. Return the chicken thighs to the skillet skin-side up and spoon some glaze over them.
  6. Transfer the skillet to the oven and roast for 15-18 minutes until the internal temperature reaches 175°F (75°C).
  7. Remove the skillet from the oven, baste the chicken with the glaze, and let rest for about 5 minutes.
  8. Garnish with freshly chopped parsley and serve hot with your favorite sides.
