  • 0.5 cup Pure Maple Syrup

  • 1 cup Marshmallows Use vegan marshmallows if preferred
  • 1 cup Raw Pecans Can substitute with walnuts or almonds

Step-by-Step Instructions for Maple Sweet Potato Casserole
  1. Preheat your oven to 400°F (200°C). Peel and cube the sweet potatoes, then toss them with olive oil, ground cinnamon, and nutmeg. Spread evenly on a baking sheet and roast for 50-60 minutes until tender and caramelized.
  2. Reduce the oven temperature to 375°F (190°C). In a mixing bowl, combine the roasted sweet potatoes with almond milk, vanilla extract, brown sugar, maple syrup, and optional allspice. Fold in raisins and half of the marshmallows.
  3. Grease a 9x13-inch baking dish. Transfer the sweet potato mixture into the dish and spread evenly. Tuck pieces of butter into the filling and top with extra marshmallows.
  4. Mix pecans with maple syrup in a small bowl. Spread this mixture over the top of the casserole.
  5. Cover with foil and bake for 15 minutes. Remove the foil and bake for an additional 15 minutes until the topping is golden brown.
