Step-by-Step Instructions for Maple Sweet Potato Casserole
- Preheat your oven to 400°F (200°C). Peel and cube the sweet potatoes, then toss them with olive oil, ground cinnamon, and nutmeg. Spread evenly on a baking sheet and roast for 50-60 minutes until tender and caramelized.
- Reduce the oven temperature to 375°F (190°C). In a mixing bowl, combine the roasted sweet potatoes with almond milk, vanilla extract, brown sugar, maple syrup, and optional allspice. Fold in raisins and half of the marshmallows.
- Grease a 9x13-inch baking dish. Transfer the sweet potato mixture into the dish and spread evenly. Tuck pieces of butter into the filling and top with extra marshmallows.
- Mix pecans with maple syrup in a small bowl. Spread this mixture over the top of the casserole.
- Cover with foil and bake for 15 minutes. Remove the foil and bake for an additional 15 minutes until the topping is golden brown.
