Preparation
  1. In a large bowl, whisk together mayonnaise, red wine vinegar, garlic powder, oregano, salt, and pepper until well combined and smooth.
  2. Add the shredded lettuce, sliced red onion, and banana peppers to the bowl with the dressing. Gently mix until all the ingredients are well-coated.
  3. Slice your sub rolls lengthwise and lay them open on a baking sheet. Evenly layer the salami, pepperoni, and turkey slices on the bottom halves of the rolls.
  4. Top these meats with slices of provolone cheese, ensuring an even spread.
  5. Preheat your oven to the broiler setting. Place the assembled sandwiches under the broiler for 2-3 minutes, watching closely.
  6. Once broiled to perfection, layer fresh tomato slices on top and season with salt and pepper. Spoon a generous amount of the grinder salad over each sandwich.
  7. Sprinkle each sandwich with grated Parmesan cheese, close the sandwiches, and serve immediately.
