Ingredients
  

For the Tart Crust
  • 1.5 cups All-Purpose Flour Can substitute with pastry flour for a lighter crust.
  • 0.5 cups Powdered Sugar Blend granulated sugar for homemade powder.
  • 0.25 teaspoons Kosher Salt A pinch enhances flavor.
  • 0.5 cups Unsalted Butter Use cold and cubed.
  • 1 large Egg Whisked to bind the dough.
  • 1 teaspoons Vanilla Extract Adds flavor to crust and filling.
For the Pastry Cream
  • 2 cups Whole Milk Half-and-half can be used for richer flavor.
  • 4 large Egg Yolks Thickens the cream.
  • 0.5 cups Granulated Sugar
  • 2 tablespoons Cornstarch Essential for thickening.
For the Toppings
  • 2 cups Fresh Fruits (Strawberries, Blueberries, etc.) Choose seasonal fruits.
  • 2 tablespoons Apricot Jam Mixed with water for glaze.
  • 1 tablespoons Water For thinning glaze.

Method
 

Making the Tarts
  1. In a food processor, combine flour, powdered sugar, and salt. Add cold butter and pulse until crumbly. Blend in egg and vanilla until dough forms. Chill for at least 1 hour.
  2. Preheat oven to 350°F. Roll out dough to ⅛ inch thickness and cut into circles. Press into mini tart pans. Freeze for 20 minutes and then bake for 15-20 minutes until golden. Cool completely.
  3. Heat milk and vanilla until hot. Whisk egg yolks, sugar, and cornstarch until smooth. Gradually add hot milk to yolk mixture, return to saucepan, and cook until thickened (5-7 mins). Cool covered with plastic wrap.
  4. Fill each tart shell with pastry cream using a piping bag. Top with fresh fruits. Optionally, brush with warmed apricot glaze.
  5. Serve immediately to maintain crust crispness.
