Preparation
  1. Preheat your oven to 175°C (350°F). Grease a 9x5 inch loaf pan and line the bottom with parchment paper.
  2. In a large mixing bowl, cream room-temperature butter and sugar together on medium speed for 2-3 minutes.
  3. Add mashed bananas, vanilla extract, and beaten eggs to the creamed mixture. Mix on low speed until blended smoothly.
  4. In a separate bowl, whisk together flour, baking soda, and salt for even distribution.
  5. Gently fold the dry ingredients into the wet mixture until there are no visible flour streaks.
  6. Fold in the shredded coconut until well distributed.
  7. Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-55 minutes until a skewer comes out clean.
  8. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
