Preparation
- Preheat your oven to 175°C (350°F). Grease a 9x5 inch loaf pan and line the bottom with parchment paper.
- In a large mixing bowl, cream room-temperature butter and sugar together on medium speed for 2-3 minutes.
- Add mashed bananas, vanilla extract, and beaten eggs to the creamed mixture. Mix on low speed until blended smoothly.
- In a separate bowl, whisk together flour, baking soda, and salt for even distribution.
- Gently fold the dry ingredients into the wet mixture until there are no visible flour streaks.
- Fold in the shredded coconut until well distributed.
- Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-55 minutes until a skewer comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
