- Begin by taking your 3-pound chuck roast out of the refrigerator and letting it sit at room temperature for about 30 minutes.
- Drizzle a generous amount of olive oil all over the chuck roast, using your hands to massage it in and coat every side evenly.
- In a medium bowl, combine all the rub ingredients and stir well.
- Generously sprinkle the dry rub all over the chuck roast, using your hands to press the mixture into the meat.
- Preheat your grill to 400°F.
- Place the seasoned chuck roast on the grill grates over indirect heat and close the lid. Allow it to cook for about 45 minutes.
- Once the internal temperature reaches 155°F, remove the grilled chuck roast from the grill and let it rest on a cutting board for 15 minutes.
- After resting, thinly slice the smoky grilled chuck roast against the grain.
