Preparation Steps
  1. Begin by taking your 3-pound chuck roast out of the refrigerator and letting it sit at room temperature for about 30 minutes.
  2. Drizzle a generous amount of olive oil all over the chuck roast, using your hands to massage it in and coat every side evenly.
  3. In a medium bowl, combine all the rub ingredients and stir well.
  4. Generously sprinkle the dry rub all over the chuck roast, using your hands to press the mixture into the meat.
  5. Preheat your grill to 400°F.
  6. Place the seasoned chuck roast on the grill grates over indirect heat and close the lid. Allow it to cook for about 45 minutes.
  7. Once the internal temperature reaches 155°F, remove the grilled chuck roast from the grill and let it rest on a cutting board for 15 minutes.
  8. After resting, thinly slice the smoky grilled chuck roast against the grain.
