Ingredients
  

For the Meatloaf
  • 1 lb Ground Beef Use 80/20 fat ratio for juiciness.
  • 1 cup Breadcrumbs Use gluten-free if needed.
  • 2 large Eggs Beaten.
  • 1 medium Diced Onion Shallots can be substituted.
  • 2 cloves Minced Garlic Fresh or can use garlic powder.
For the Mushroom Gravy
  • 8 oz Sliced Mushrooms Mix of button and cremini recommended.
  • 1 cup Beef Broth Low-sodium preferred.
  • 1 cup Heavy Cream Use half-and-half or milk for a lighter version.
  • 1 tsp Fresh Thyme Or use dried thyme at one-third the amount.
  • 1 tbsp Worcestershire Sauce Can substitute with soy sauce.
  • 2 tbsp Butter Oil can be a lighter option.
For the Glaze
  • 1/2 cup Ketchup Brush more on during the last 15 minutes.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Allow about 10 minutes for it to reach temperature.
  2. In a large mixing bowl, combine ground beef, breadcrumbs, beaten eggs, diced onion, minced garlic, Worcestershire sauce, half of the fresh thyme, salt, and pepper. Mix gently.
  3. Transfer the mixture to a loaf pan or shape into a loaf on a lined baking sheet. Form evenly and brush the top with ketchup.
  4. Bake for 50-60 minutes, or until the internal temperature reaches at least 160°F (71°C). The top should be caramelized.
  5. Let the meatloaf rest for about 10 minutes before slicing.
  6. In a skillet, melt butter over medium heat, add sliced mushrooms, and sauté until golden brown, about 5-7 minutes. Add minced garlic and remaining thyme.
  7. Pour in the beef broth and simmer for 5 minutes.
  8. Stir in heavy cream and let it thicken for another 5 minutes.
  9. Slice the meatloaf and ladle mushroom gravy over each slice before serving.
