- Preheat your oven to 375°F (190°C). Allow about 10 minutes for it to reach temperature.
- In a large mixing bowl, combine ground beef, breadcrumbs, beaten eggs, diced onion, minced garlic, Worcestershire sauce, half of the fresh thyme, salt, and pepper. Mix gently.
- Transfer the mixture to a loaf pan or shape into a loaf on a lined baking sheet. Form evenly and brush the top with ketchup.
- Bake for 50-60 minutes, or until the internal temperature reaches at least 160°F (71°C). The top should be caramelized.
- Let the meatloaf rest for about 10 minutes before slicing.
- In a skillet, melt butter over medium heat, add sliced mushrooms, and sauté until golden brown, about 5-7 minutes. Add minced garlic and remaining thyme.
- Pour in the beef broth and simmer for 5 minutes.
- Stir in heavy cream and let it thicken for another 5 minutes.
- Slice the meatloaf and ladle mushroom gravy over each slice before serving.
